Depuis le XIV siècle, en Bourgogne, la coutume voulait que l'on ne tue le cochon qu'après le 11 Novembre. Le jour où l'on tuait le cochon était nommé la Saint-Cochon. C'était le seul jour de l'année où l'on mangeait du cochon frais. Le reste du jambon était gardé au saloir pendant l'hiver et on ne ressortait ce jambon que pour la période de Pâques afin de fabriqué le Jambon de Pâques, le Véritable Jambon Persillé de Bourgogne.
